Distillery Tour

After your Pineapple Tour, see how one local company is utilizing Maui Gold Pineapples! Located in the heart of Maui’s pineapple region, Hali’imaile Distilling Company uses local ingredients and a unique distilling process to create their spirits.

Tour includes a 20 to 30 minute tour of the distillery, where you will learn about the local ingredients and custom stills being used to create these spirits. The tour will continue to the tasting room, where you can sample three of the following products:

Pau Maui Vodka
Hali’imaile Distilling’s award-winning flagship brand and the only vodka in the world made from Hawaii-grown Maui Gold® pineapples. Note the neutrality of Pau; no pineapple flavor here! Also available in Pau Maui Vodka Infused with Cognac and Pau Maui Oaked Vodka.

Paniolo Blended Whiskey
The combination of aged Kentucky Straight Bourbon Whiskey and Hali’imaile Distilling’s signature pineapple distillate, this blend gives off Smoky tones of the bourbon and a sweet finish generated from the distillate. Also available in three flavors: Brown Sugar, Coffee, and Chocolate Coconut.

Mahina Rum
Produced locally on Maui in Hawaii, you’ll instantly taste the quality and authenticity of this premium rum every single sip. Distilled and carefully blended with raw turbinado sugar, Kona coffee distillate, Madagascar vanilla, cocoa essence, clove, cinnamon and citrus oils it adds a complex layer of flavors that is sure to please even the most discerning palate.

Fid Street Gin
The first gin ever created on Maui. Crafted with eleven botanicals, Fid Street is reminiscent of an aromatic fresh-cut floral bouquet with citrus dancing on the nose and a hint of forest air.

Guests of the distillery tour will receive a complimentary Hali’imaile Distilling Company shot glass as well as 10% off non-liquor merchandise.

*Distillery tour is for all ages, however, the tasting room is for 21 years old and up. Please bring valid ID with you. Please plan for approximately 45 minutes at the distillery. Celebrated Chev Bev Gannon’s original restaurant, Hali’imaile General Store is on everyone foodie’s list.]

Bev Gannon at her home kitchen in Makawao.

Beginning in 1973 Beverly (nee) Shanbaum worked in the entertainment business as a road manager for Liza Minnelli and a personal assistant for Joey Heatherton. In 1977 she studied at Le Cordon Bleu in London, then began a catering business in Dallas. In 1980 she moved to Maui with her then-boyfriend Joe Gannon, a concert tour producer; they married a year later. Bev Gannon resumed her catering business out of her home kitchen in Makawao, in Maui’s Upcountry district. In 1987 the Gannon’s acquired a lease on the Hali’imaile General Store in nearby Hali’imaile and moved her business into the large, rundown 1925 building. The restaurant they opened there in 1988 was an immediate, popular and critical success.

Gannon later opened two restaurants in Wailea: Joe’s in 1995, and Gannon’s in 2009. She also provided recipes for the restaurant at the remodeled Hotel Lana’i on the island of Lana’i. From 1999 to 2010 Gannon also served as the executive chef for Hawaiian Airlines.

Shopping and Exploring Paia and Makawao and Upcountry Maui

With our Not Pau TourTM option, your tour ends when you say so, not when the schedule dictates. Go exploring for the day in historic Makawao Town, the birth place of the Makawao Rodeo and the Paniolo Cowboy. Our driver will stand by at your direction or accompany your group as your personal tour guide. There’s lots to see, from a glass blowing studio, to unique shops and boutiques, saddled by some of Maui’s best hole-in-the-wall restaurants.

Just five minutes down the slopes of Haleakala from the pineapple fields, Paia Town (pronounced pie-EE-yah, unlike the Spanish seafood dish) is the epicenter of Maui’s North Shore. One glance at the people and the shops, you can sense the international flavor. Europeans and surf aficionados from around the world have long gathered there to surf Ho’okipa, the world renowned windsurfing beach. Stop at any of Paia’s amazing restaurants, or visit Charley’s restaurant, a favorite hangout of Willie Nelson, for a bite or a beer.

Perhaps you’ll want to drive down the coast to see the windsurfers and kite surfers in action skimming the surface of the waves like butterflies on shimmering glass, or head another 5 miles down the coast to Peahi to witness the power of “Jaws”, one of the world’s biggest waves.
